He estado intentando instalar Latte Dock en Ubuntu con KDE Plasma, sigo recibiendo errores con dependencias no satisfechas. Intenté eliminar los paquetes antiguos, pero eso elimina la totalidad de KDE Plasma. ¿Alguna ayuda?

Solucioné este problema agregando el PPA de KUbuntu Backports y realizando una actualización. Esto actualizó los paquetes que estaban desactualizados.
sudo add-apt-repository ppa:kubuntu-ppa/backports
Esto actualizó todos los paquetes (muchos) y el Latte instalado a través de la Tienda KDE.

Deberías intentar arreglar todos los paquetes rotos que tengas con:
apt install -f
