Busqué un problema similar pero solo encontré una publicación sobre un error al compilar una versión MODIFICADA de la misma plantilla mientras que la versión no modificada funcionó bien (así que espero que esto no se considere un duplicado)

Lo que entiendo es que los errores \begin{document} no definidos generalmente están relacionados con paquetes. No incluí un MWE porque no modifiqué la plantilla y me da este error desde el primer momento. Pero enumeraré los paquetes que utiliza (presentes en estructura.tex):

ComoChristian Hupfersugerido, era un problema porque mi distribución MiKTeX estaba desactualizada como se muestra en \listfiles. Mi distribución no pudo sincronizarse y tuve que reinstalarla para que funcione. Después de la reinstalación, la plantilla funcionó perfectamente.
