Soy consciente de que hay preguntas similares como esta en TeX.SE, pero no soy lo suficientemente competente para inferir entre otros ejemplos y el mío o para aislar la línea de código problemática.
Estoy confundido porque no es solo el tamaño del texto lo que crea el corte; si cambio el tamaño del texto de 36 a 12, seguirá cortado.
¿Alguien puede sugerir?

Hazte un gran favor y aprende a utilizar el tabularxmedio ambiente. Hacerlo lo liberará de las limitaciones artificiales (y probablemente insatisfactorias) impuestas por el software que pretende "automatizar" la generación de material tabular. Aún puedes utilizar dicha herramienta para crear una maqueta inicial de la mesa. Simplemente no trate la maqueta como el estado final o casi final del proceso de producción.
En la siguiente tabla, elcontenidoNo han cambiado con respecto a lo que publicaste. Lo que ha cambiado significativamente es la configuración del encabezado. Por ejemplo, el material de las columnas ahora está alineado a la izquierda (con salto de línea automático, para asegurarse de que la tabla no sea demasiado ancha) en lugar de centrado.
