Estas partes de los registros son poco esclarecedoras.
(1) ¿Son reales las advertencias/errores originales? ( xelatexno se ejecuta para mis fuentes de entrada, pero no debería significar mucho porque mi entrada podría ser incorrecta con respecto a ese antiguo xelatex). Si son reales, ¿cómo repararlas? Actualizar a TeX Live 2008 no es una opción en esta pregunta, pero degradar (o configurar algunas banderas o codificaciones de terminal) podría serlo (si solo ayuda).
(2) ¿Hay algo de qué preocuparse si ejecutamos solo latexarchivos pdflatexcodificados en latin1 y UTF8?

Durante mucho tiempo (pero no en las versiones actuales), el formato latex daba un error al crear el .fmtarchivo si el archivo fuente tenía más de cierta antigüedad. Esto era para alentar a las personas a actualizar y no simplemente quedarse con algunas versiones preliminares de latex2e. .
Entonces, a menos que falsifique el reloj del sistema o modifique las fuentes de texlive2007 para omitir esta verificación, al crear cualquier formato de látex (por ejemplo, látex, pdflatex, lualatex, ...) se mostrará el error. A medida que el instalador supera el error, los formatos reales aún se crean, pero la ejecución de initex tendrá un código de salida distinto de cero, por lo que al final el resumen advertirá.possibly failed.
Entonces, suponiendo que realmente necesite compilar TeXLive 2007 (y según sus otras preguntas eso no está nada claro), se esperan estas advertencias: solo le advierten que está utilizando fuentes antiguas.
