Pero cuando lo ejecuté con --extract-audio --audio-format mp3 [URL], terminó con

ERROR: ffprobe or avprobe not found. Please install one.
Y cuando quiero actualizar el paquete youtube-dl, para instalar archivos adicionales:

Y cuando quiero instalar ffmpeg:
# apt-get install ffmpeg

Te faltan fuentes en tu sources.list

VerRepositorios Kalisources.list, que dice:
En una instalación limpia y estándar de Kali Linux, debería tener las siguientes dos entradas presentes en /etc/apt/sources.list:
deb http://http.kali.org/kali sana main non-free contrib deb http://security.kali.org/kali-security sana/updates main contrib non-free
Parece que tienes la segunda línea, pero no la primera. Revisar su sources.list
