Problema:

As configurações sofisticadas que apliquei aos "Capítulos" são aplicadas em Tudo no documento. => Índice e bibliografia (não incluídos no código de exemplo acima) agora são exibidos como 'Capítulos'.

Além disso, tenho que desativar:

%\listoffigures
%\listoftables

pois a ativação dessas seções leva a erros de compilação (quando as configurações do capítulo se aplicam a elas).

Como o índice vem antes dos capítulos numerados, você pode mover seus comandos \titleformate depois de , para que isso não seja afetado.\titlespacing\tableofcontents

Você também pode definir comandos, que agem como um switch: um chama \titleformatde \titlesectionmaneira sofisticada, e o outro chama com configurações padrão, que podem ser encontradas no titlesecapêndice da documentação. Assim, você pode ligar e desligar como quiser.
