O problema foi que eu criei um adjustbox.styarquivo em minha pasta de compilação (e então esqueci dele), então meu arquivo sty personalizado foi lido em vez do arquivo TeX Live.
Como observou David Carlisle, o log indicava que estava lendo o arquivo sty local.
