Estou tentando (sem sucesso) reduzir o tamanho do CONTRACTED_Byrelacionamento neste modelo ER usando otikz-er2pacote. Naturalmente, ele dimensiona a altura com a largura, mas eu preferiria que a altura fosse menor. Existe alguma maneira de conseguir isso? (Desculpe, isso não é tão mínimo quanto poderia ser, mas decidi replicar a figura que tenho.)

Você pode alterar a aspectproporção desse nó com a aspectchave. Por padrão, o estilo está definido como 1. Aqui eu mudei para 2.

Não consigo compilar seu código porque estou sentindo falta do tikz-er2, mas olhando para o seu código, a caixa "CONTRACTED_BY" é maior por causa do comprimento do texto. Eu diria que se você reduzisse o tamanho do texto, a caixa também seria menor. Você pode tentar o seguinte:
