No entanto, por razões que não entendo, descomentar as opções xticklabelse yticklabels(que não devem fazer absolutamente nada no que me diz respeito, já que no momento contêm o mesmo texto) muda todos os ticklabels em 1 unidade. Acho isso altamente confuso. Como esse comportamento pode ser evitado?

Ainda não encontrei a causa da mudança de rótulo, normalizedmas sinto que tem algo a ver com a opção. Vou dar uma olhada nisso mais tarde.

Entretanto, queria propor um código ligeiramente alternativo ao seu, que por sinal, não tem o mesmo problema.

Em vez de digitar vários \nodecomandos, você pode fazer apenas um, \addplot ... coordinatesentão você só precisa das próprias coordenadas e das metainformações. Adicionei notas às adições para explicar o que elas fazem.
