У меня вот такое странное поведение:

Как будто я ввел lhang=1как необязательный аргумент, но я ничего такого не делал. Что может быть причиной этого?

Lettrine работает с абзацами: он изменяет parshape. В вашей среде отсутствует a \parв конце, поэтому группы заканчиваются перед абзацем, а настройки lettrine теряются для всего абзаца. Добавьте a \parк вашему определению \endprayer.
