У вас три проблемы:

1. Определения нет \fromname;
2. Вы начинаете с \begin{letter}и заканчиваете на \end{lettre};
3. Поскольку вы исключаете адрес электронной почты, вам следует удалить последнюю запятую в списке полей, указанных для \DTLforeach{<db>}{<list>}{..}, в противном случае datatoolожидается что-то. И это что-то не может быть пустым.
