Я создаю следующую форму. Таблица должна быть заполнена вручную ручкой или карандашом. Но пространство, которое становится доступным в каждой строке, ограничено (по вертикали). Как мне увеличить вертикальное пространство между столбцами

Другой способ — вручную указать нужный вам пропуск после каждой строки, заменив \\его на \\[skip].

Таким образом, вы даже можете дифференцировать пропуск для каждой строки.

Например, в следующем MWE я указал 5exпосле каждой белой строки и 7exпосле каждой серой строки:
