He intentado redefinir los márgenes usando newgeometry
pero esto no ha ayudado y pierde el formato usado en el resto del documento. Cualquier ayuda sería muy apreciada, gracias de antemano.

Aquí hay otra solución más. Se centra en organizar y agrupar realmente el material en la fila del encabezado, para que al lector le resulte más fácil descubrir de qué se tratan los números. (Por cierto, creo que el encabezado "IPC" es demasiado conciso y, de hecho, engañoso; es mejor utilizar "Inflación del IPC", ¿verdad?)

Yo rediseñaría tu MWE de la siguiente manera:
- limpiar el preámbulo (eliminar todos los paquetes cargados dos veces)
- agrupar paquetes según sus propósitos (todos los paquetes relevantes para tablas y matemáticas se cargan juntos)
- use el paquete
makecell
para escribir encabezados de columnas en dos líneas (al reducir el ancho de la tabla) - rotar la tabla con
sideways
, pero nota:tabular

Además, los encabezados de las columnas se pueden reorganizar comosugirióBernard en su primer ejemplo y tambiénmicoen su respuesta. En esta parte del diseño de la tabla lo olvidé cuando "limpié" tu MWE :(. Ahora también muevo \label˙on the place where it should be: immediately after
el título`.
Apéndice:
El nuevo ejemplo, en comparación con el anterior, tiene encabezados de columna rediseñados, filas agrupadas para una lectura más fácil, una forma similar a la que aprendemos en la escuela primaria, sin el uso del makecell
